HONEY SUN DRIED COFFEE

The micro - lot is meticulously crafted using fully ripened hand picked coffee cherries.

Its name is inspired by the cherries and the unique processing method used.  The cherries are carefully hand picked at their peak ripeness, when they are vibrant red in color.  They are then de-pulped and skillfully sun dried with the honey-like mucilage intact, followed by shade processing. 

Shade processing slows the drying process, allowing for higher fermentation of the beans.  This enhance the coffee's natural sweetness giving it a flavor profile reminiscent of a touch of honey, making it one of our finest roasts
